A better overview with a hope this will help you to choose a crating profession. I always enjoy crafting in games and this game have a very well designed crafting system.
Personally I will take the Synthweaving as a Sith Juggernaut or Jedi Guardian.

At lvl 1 you can go to the spaceport and fly to your Imperial//Republic fleet to learn your gathering/crafting skills. You can collect resources however you cant' craft until you have your first companion.

Every character can have tree crew skills. Crafting, gathering and a mission skill.
Crafting and gathering obvious how work, the mission skill can confuse a little.
You can send your companion to do mission for you. Every mission skill have four option what you can choose.
• To collect material's for you same as you can get with gathering.
• To find rare components what need to use for a higher quality items.
• To find companion gift's.
• To find lockboxes, they contain random weapon, armor credits or schematics.

The must useful the send them for a rare components this what will need most in quality crating process, they can get green, blue, purple, components.
When the item created with your crafting profession by your companion. you can reverse engineering and discover new recipes, green, blue, purple version of the item what you originally created. Also get back some of the material what been used to make the item.
Only companion's can do the crafting, you only can do a gathering.

At level 50. You can issue crafting orders to up to five companions at a time,
and each companion can add up to five crafting tasks to their queue. You
can cancel crafting progress from anywhere if you need to, and the
resources your companions were using will be returned to you.
Your crafting queues will even continue to progress if you have to go offline,
when you log back on, you’ll receive any items that were completed
while you were gone.

Companions with high affection will have their ability to perform
crafting tasks greatly improved. For example, a companion with high
affection can craft items faster, that is becomes really significant when
crafting tasks will take hours.
Every companion have crafting bonus. For example Vetter, have Underworld Trading +5 Efficiency, Treasure Hunting Critical +5. If you send her for missions she can return with two component instead of one or with higher quality crafting material.
Each of your companion will do something better then the another's. For example, you send your companion to craft for you a chest peace and her/him have a +5 critical for armor crafting then your companion have a chance to make the chest peace with a higher stats on it mean the original recipe has or can make you a chest peace with one extra mod slot called modulator slot. So it is important to send a right companion for a the crafting task. Modulator slots are on critical crafted items, and are effectively a free bonus slot.
Anything crafted can have an modulator slot, even if the item is not moddable in any other way (implants, for example). Modulators are obtained through Underworld Trading missions and can have any stat making critical crafted fully moddable items a best items in a game.

• Item modifications can be done anywhere at anytime. No workbench required.
• A new Custom quality (orange) was introduced to legitimize moddable items as their own quality and type.
• Modifications can be extracted from a Custom item. (for a credit pirce)
• End game artifact quality (purple) gear is partially moddable
• Crafted (orange) gear can make as good as an operation loot purple armor however, some required components can obtain only though operations
• If you have issue with your bank- storage space, you can send items to your alts though mail, without any credit cost, instant arrival.

Artificer: (Crafting skill)
This skill specializes in creating Sith/Jedi artifacts modifications for items, including lightsaber's, something what force users will covet during their journeys. Artifice not only makes upgrades for yourself, but your force user companion and for other force users as well.
• Enhancement: This modification can be used to upgrade weapons and armors.
• Offhand Gadget: Shield generator and Force Focus
• Emitter Matrix: Crystal shard for datacrons.
• Color Crystal: Color crystal to upgrade lightsaber, weapons and armors also to determine the lightsaber beam color.
• Hilt: This modification can be used to upgrade lightsaber.
• Focus Lens: This mod can be used to upgrade lightsaber.
• Power Crystal: This modification can be used to upgrade lightsaber and weapons.
• Lightsaber: Main hand, off hand and double bladed lightsaber.
• Relic's: Stat's increase and greatly boost up character stats (20 seconds) trinkets.
The mods to go into armor and weapons will always be in high demand.

The ability to seek out imbued items like Lightsaber crystals and ancient artifacts (for Power Crystals, Color Crystals and Artifact Fragments).
Treasure Hunting: (Mission skill)
The ability to track down and recover valuable items by investigating a series of clues (for Gemstones). Also yields Companion Gifts.
Artificers can reverse engineer their crafted items and discover new ways to improve they creations.

Synthweaving: (Crafting skill) Only for Force users
Synthweaving is good making armor that are imbued with supernatural qualities. You not only makes armors for yourself, but your force user companion and for other force users as well.
• Light armor: Sith Sorcerer and Sith Assassin/Jedi Sage and Jedi Shadow
• Medium armor: Sith Marauder/Jedi Sentinel
• Heavy armor: Sith Juggernaut/Jedi Guardian
Go along with:
Archaeology: (Gathering sill)
The ability to seek out imbued items like Lightsaber crystals and ancient artifacts.
Underworld Trading: (Mission skill)
Expertise in the trading of illegal goods and services (for Luxury Fabrics and Underworld Metals and modulators).
With Synthweaving can reverse engineer their crafted items and discover new ways to improve they creations.

Armortech:(Crafting skill) Only for not Force Users
The ability to work with hard metals and electronic shielding to construct all types of personal armors. You not only makes armors for yourself, but your non force user companion and for other non force users as well.
• Light armor:
• Medium armor: Imperial Operative and Sniper/ Smuggler Gunslinger and Scoundrel
• Heavy armor: Bounty Hunter Mercenary and Powertech/Republic Commando and Vanguard

The art of recovering useful materials and parts from old or damaged technology (for Scavenged Metals and Compounds).
Underworld Trading: (Mission skill)
Expertise in the trading of illegal goods and services.,(for Underworld Metals).
The Armortech can reverse engineer their crafted items and discover new ways to improve they creations.

Armstech: (Crafting skill)
This skill specializes in creating a weapon arsenal.
You not only makes weapons for yourself, but your non force user companion and for other non force users as well.
• Assault Cannon
• Blaster Pistol
• Blaster Rifle
• Sniper Rifle
• Barrel: This modification can be used to upgrade your Firearms, Hand Cannons.
• Scope: This modification can be used to upgrade Firearms, Hand Cannons.
• Trigger: This modification can be used to upgrade Firearms, Hand Cannons.
• Vibroknife and Blades: This weapon is only used by special abilities.

Investigation: (Mission skill)
The skill of examining evidence and following clues to discover valuable secrets
(for Researched Compounds). Investigation however, is an interesting one. It also offers prototype schematics for all crafts, and Companion Gifts.

Cybertech: (Crafting skill)
High tech armor and weapon upgrades. Droid armor for Cyborg class and companions.
• Overlay: This armoring can be used to upgrade armors.
• Underlay: This can be used to upgrade armors.
• Harness: This modification can be used to upgrade armor.
• Circuitry: This can be used to upgrade weapons and armors.
• Offhand Gadgets: Shield Generator
• Grenade:
• Earpiece: Equitable item.
• Mod: This modification can be used to upgrade weapons and armors.
• Armoring mod: This Armoring can be used to upgrade armor quality.
• Vehicles: Increase moment speed.
• Space Ship: Armors and weapons can be used to upgrade a space ship.

Biochem: (Crafting skill)
Allows the creation of performance-enhancing serums and various implants. You can consider this the 'potion maker' of The Old Republic.
• Med kit: Instant heal (90 sec cooldown)
• Med unit: Instant heal you and your companion (90 sec cooldown)
• Stimpac: Stat's buff (60 min duration)
• Adrenalin: Very strong short buff for 15 sec duration (3 min cooldown)
• Implant: Increasing character stats.

Bioanalysis: (Gathering skill)
The practice of collecting genetic material from creatures and plants (for Biochemical Samples and Compounds).
Diplomacy: (Mission skill)
The art of conducting and managing negotiations (for Medical Supplies).
Also, can yield Companion Gifts. Moreover, missions yield Dark or Light Side points.
